Cozy Creamy Chicken Noodle Soup


Ingredients

  • 1 lb chicken breasts

  • 1 yellow onion, chopped

  • 3 celery stalks, chopped

  • 3 carrots, chopped

  • 8 oz tomato paste

  • 4 cups vegetable broth

  • 5 cups water

  • 1 ½ cups ditalini pasta (cooked separately)

  • ½ cup heavy cream

  • Salt, pepper, and Italian seasoning (season chicken)

  • 1 tablespoon butter

  • Optional: grated Parmesan cheese and fresh parsley for garnish


Instructions


  1. Sauté the Vegetables:

    • Heat a large pot over medium heat and melt the butter.

    • Add the chopped onion and cook for about 5 minutes until fragrant and golden.

    • Stir in the celery and carrots, cooking for an additional 10 minutes until softened.


  2. Build the Broth:

    • Add the tomato paste, vegetable broth, and 5 cups of water to the pot. Stir well to combine.

    • Bring the mixture to a gentle simmer, cover, and cook for 20 minutes.


  3. Prepare the Chicken:

    • While the broth simmers, season the chicken breasts with salt, pepper, and Italian seasoning.

    • In a separate skillet, heat a tablespoon of butter over medium heat. Sear the chicken for 5 minutes on each side until golden and cooked through.

    • Remove the chicken, shred it with two forks, and add it to the simmering soup.


  4. Simmer for Flavor:

    • Allow the soup to simmer for 1-2 hours to develop a rich, flavorful broth.


  5. Cook the Pasta Separately:

    • Boil the ditalini pasta in salted water according to package instructions. Drain and set aside.


  6. Add Creamy Goodness:

    • About 10 minutes before serving, stir the heavy cream into the soup for a velvety finish.


  7. Serve and Enjoy:

    • To serve, add a scoop of cooked pasta to each bowl and ladle the hot soup over it.

    • Sprinkle with grated Parmesan cheese and fresh parsley for an extra pop of flavor.
