Cozy Creamy Chicken Noodle Soup

Ingredients
1 lb chicken breasts
1 yellow onion, chopped
3 celery stalks, chopped
3 carrots, chopped
8 oz tomato paste
4 cups vegetable broth
5 cups water
1 ½ cups ditalini pasta (cooked separately)
½ cup heavy cream
Salt, pepper, and Italian seasoning (season chicken)
1 tablespoon butter
Optional: grated Parmesan cheese and fresh parsley for garnish
Instructions
Sauté the Vegetables:
Heat a large pot over medium heat and melt the butter.
Add the chopped onion and cook for about 5 minutes until fragrant and golden.
Stir in the celery and carrots, cooking for an additional 10 minutes until softened.
Build the Broth:
Add the tomato paste, vegetable broth, and 5 cups of water to the pot. Stir well to combine.
Bring the mixture to a gentle simmer, cover, and cook for 20 minutes.
Prepare the Chicken:
While the broth simmers, season the chicken breasts with salt, pepper, and Italian seasoning.
In a separate skillet, heat a tablespoon of butter over medium heat. Sear the chicken for 5 minutes on each side until golden and cooked through.
Remove the chicken, shred it with two forks, and add it to the simmering soup.
Simmer for Flavor:
Allow the soup to simmer for 1-2 hours to develop a rich, flavorful broth.
Cook the Pasta Separately:
Boil the ditalini pasta in salted water according to package instructions. Drain and set aside.
Add Creamy Goodness:
About 10 minutes before serving, stir the heavy cream into the soup for a velvety finish.
Serve and Enjoy:
To serve, add a scoop of cooked pasta to each bowl and ladle the hot soup over it.
Sprinkle with grated Parmesan cheese and fresh parsley for an extra pop of flavor.
